Sushi Hana – Cravemag Hong Kong & Macau

The Space

A few doors down from its Michelin-starred sister restaurant I M Teppanyaki & Wine in Tai Hang, Sushi Hana is restaurateur and chef Lawrence Mok’s first sushi restaurant offering omakase-style dining. The 17-seat theatre-style counter gives diners an unobstructed view of the chefs at work. Decorated with Japanese artworks, the brightly lit interior is unpretentious, welcoming, and very cosy.

The Food

What sets Sushi Hana apart from a lot of Japanese fine-dining restaurants in Hong Kong is that, rather than hiring only Japanese chefs, the establishment prides itself on having a local chef at the helm. Restaurant owner Lawrence Mok is a firm believer that you don’t have to be Japanese to be an excellent chef of Japanese cuisine – a point he has proven when I M Teppanyaki & Bar became the first Chinese-owned teppanyaki restaurant to be awarded a Michelin star.

Firefly squid

We are thoroughly impressed by the chef’s selection of seasonal ingredients and his attention to detail from plating to service. There wasn’t a single item that we didn’t enjoy during this spring omakase experience, with several highlights: marinated hotaru ika, or firefly squid, with a burst of creaminess and a smoky, earthy flavour; katsuo tataki, a famous Kyushu dish of hay-smoked skipjack tuna with incredibly crumbly skin and tender, flakey flesh; the very sweet and springy torigai sushi, which got its name thanks to its beak-like appearance; and Hokkaido sweet shrimp sushi – topped generously with three pieces of sweet shrimp, the morsel has a satisfying briny sweetness and is soft without being mushy, coating our mouths with sweet umami.

The Verdict

Omakase at Sushi Hana is undoubtedly one of the best we’ve had in a while. The chef’s passion and dedication to his craft and the knowledgeable service team only added to the overall pleasant experience. We can’t wait to see what Sushi Hana has in store for the seasons to come.
